ALL YOU NEED TO KNOW ABOUT CHOOSING A PERFECT STEEL KNIFE

Different jobs need different kinds of knives. Choosing the perfect knife for every task can be cumbersome. To buy the right kind of knife, one needs to pay attention to various details like the kind of blade, steel, knife edge geometry, design along with many other aspects. Each detail governs the type of task that it would be perfect for. Steel is an alloy that is incorporated with various other elements in varying ratios to enhance your knife’s performance.

The various types of steel knife material are:

CARBON STEEL: Steel has a mix of carbon and iron. When more carbon is added to this already predefined ratio of the alloy, it is called carbon steel. Carbon steel is harder than normal steel making it easy to sharpen. A carbon steel knife can be as thin as possible because of its rigidity. On the other hand carbon steel is prone to rust and stains. Carbon steel knives are quite high maintenance but are ideal for high precision cutting.
A 440C stainless steel knife is one such example of a carbon steel knife. It has the highest percentage of carbon in all carbon steel knives. It is not ideally tough, although its wear resistance and corrosion resistance makes it a go-to chopping equipment. It is ideal for camping and hunting activities because of it being very sharp.

DAMASCUS STEEL: This type of steel is also called laminated steel. It is not a type of steel but a layered form of multiple types of steel. In Damascus steel sharp and brittle type of steel is used as the core while the upper layer is made up of soft but tough steel. Damascus steel scissors are made using such steel. These are used for hair-dressing because of its layered nature, which makes it ideal for scissor making.

STAINLESS STEEL:  Stainless steel is yet another alloy but of different proportions of ratio. It is an alloy of iron with 10 to 15 percent chromium, nickel, or molybdenum and only a small
amount of carbon. Stainless steel is highly resistant to wear and tear but cannot be sharpened much.

Knives can be ultimately chosen on the basis of the following properties of the type of steel.

HARDNESS
Hardness is the ability to resist deformation when stress and any external force is applied. Rockwell C scale or “HRC” is used to measure knife hardness.


TOUGHNESS
Toughness is the ability of any material to absorb energy and resist any fracturing. Any steel that fractures easily is not a good candidate for making knives. Steel that fractures easily cannot be used on harder surfaces.



SHAPE
The kind of work you want to put your knife to,  largely depends on its shape too. Every knife type according to its shape and angle can have different uses. Cleavers, bowie, hunting, etc are shaped accordingly. The cleaver knife is of rectangular shape, bowie is smaller and angular, the hunting knife is sharpest one and has a tratetig knife.
